Butternut Squash Mac n Cheese

I found this recipe on the Team Beachbody blog.  I really wasn't sure how I'd feel about butternut squash in my mac n cheese but then I realized that it's liquidized and you can't even taste it!  Use gluten free pasta if you're gluten free.  Did mine look as pretty as this picture?  Of course not!
But it was a huge hit in my house and I hope you enjoy it too :)



Total Time: 1 hr. 16 min.
Prep Time: 15 min.
Cooking Time: 61 min.
Yield: 10 servings, about 1½ cups each

Ingredients:
1 lb. dry whole wheat macaroni
1 tsp. olive oil
1 medium onion, chopped
2 medium red bell peppers, chopped
3 cups cubed butternut squash
1¾ cups low-sodium organic chicken broth
1 cup low-fat (1%) milk
2 Tbsp. low-fat (1%) plain Greek yogurt
1 cup shredded Gruyere (or Swiss) cheese
1 cup shredded sharp cheddar cheese
Sea salt and ground black pepper (to taste; optional)
Nonstick cooking spray
Finely chopped fresh parsley (for garnish; optional)

Preparation:
1. Preheat oven to 375° F.
2. Cook macaroni according to package directions. Drain and set aside.
3. Heat oil in large nonstick skillet over medium-high heat.
4. Add onion and bell peppers; cook, stirring frequently, for 4 to 6 minutes, or until onion is translucent. Set aside.
5. Combine squash, broth, and milk in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to medium; gently boil for 22 to 25 minutes, or until squash is tender.
6. Place squash mixture in a blender or food processor; cover with lid and kitchen towel. Blend until smooth.
(*I used my immersion blender for this*)
7. Combine squash mixture, macaroni, onion mixture, yogurt, and cheeses. Season with salt and pepper if desired; mix well.
8. Place macaroni mixture in a 13 x 9-inch ceramic or glass baking dish that has been coated with spray. Bake for 25 to 30 minutes, or until sauce is bubbling.
9. Garnish with parsley if desired.

Tip: Blend small batches of hot liquids in blender or food processor since they expand during the blending process, therefore decreasing the chance of overflowing.

Flourless Chocolate Chickpea Brownies



Autumn Calabrese came out with her cookbook, Fixate, to compliment 21 Day Fix & 21 Day Fix Extreme.  These recipes are AMAZING!!  I haven't had one yet that wasn't a hit in our house.

I made these brownies this week and there were gone within hours.  They're gluten free, vegetarian and DELICIOUS!

Flourless Chocolate Chickpea Brownies


Serves 16 (1 brownie each)
Prep Time: 20 min
Cooking time: 28 min
Container equivalent: 1 yellow

Ingredients
1 (15oz) can chickpeas (garbanzo beans), drained & rinsed

1/4 organic grass-fed butter, melted (or extra virgin organic coconut oil) 
(I used regular butter)

2 large eggs

1/2 cup pure maple syrup (or raw honey)

2 tsp pure vanilla extract

1/3 cup organic unsweetened cocoa powder 
(I used regular cocoa powder)

1/2 tsp gluten free baking powder

1 pinch sea salt (or Himalayan salt)

1/4 cup semi-sweet (or dark) chocolate chips

1. Preheat oven to 350 F (180 C or gas mark 4)

2. Line 9 x 9 inch baking pan with parchment paper.  Lightly coat with cooking spray.
(I used an 8 x 8 inch pan so my brownies came out thicker)

3. Place chickpeas, butter, eggs, maple syrup, extract, cocoa powder, baking powder & salt in blender or food processor; cover.  Blend until smooth.

4. Add chocolate chips; mix by hand until blended.

5. Evenly spread batter into prepared pan.

6. Bake for 25-28 minutes or until a toothpick inserted into the center comes out clean

7. Cut into squares.

Variation:

You can substitute cannellini beans for garbanzo beans.  They make a smoother brownie.

Meal Prep Tips!

Meal planning & food prep are going to be your keys to success in any program.  I'm currently doing the 21 Day Fix Extreme Countdown to Competition plan.  It alternates 2 carb depletion days with 1 Fix Extreme day.  It's tough but having veggies, protein & sweet potatoes cooked beforehand has been a lifesaver!

Here's what I did:

Cooked 2lbs ground turkey with 21 Day Fix All Purpose Seasoning
Broiled 1lb chicken breast with 21 DF Smoky Southwestern Seasoning
(see below for seasoning recipes)
Baked 3 sweet potatoes
Steamed broccoli & asparagus

Unfortunately, I didn't time anything.  I poked holes in the sweet potatoes and put them on a cookie sheet with foil for at about 400 degrees.  You have to put something under them like foil or parchment paper because as they cook, the natural sugar will start to leak out.  It can get messy.  When you can easily slide a knife through them, they're done.  Slice them up so they cool & put them in the fridge.

I broiled the chicken breasts on high for maybe 10 minutes.  I honestly can't remember but it didn't take long since the broiler was on high and each one was about 4oz.  Make sure they are NOT pink in the middle.  I don't want anyone to get food poisoning!

I used my giant pan and a quick spray of EVOO and cooked up the ground turkey.  I have a Pampered Chef Mix & Chop that is perfect for breaking up the ground meat crumbles.  Works better if the meat is mostly cooked.

I used my green and red containers to portion out my meals into plastic containers for the fridge.

This took maybe an hour, at the most on a Saturday.  It's not Monday & it's just about gone only because doing Countdown to Competition requires A LOT of protein.  Below are the seasoning mixes I used.  This kind of prep can be done with most meats & veggies just be sure they are cooked to the right temp!

Doing What I Never Thought Possible

A few weeks ago, one of my fellow coaches started a Curb to 5k group for beginner runners.  I had signed up for a 5k to benefit Miracles for Molly and figured I might as well get started.  I am not a runner.  My standard line has always been "I only run when chased".  I've sprained my ankles numerous times and I have arthritis in my knees so I've never even tried to run.

Here's a little back story on me.  Back when I was 12 or 13, I started having pain in my knees playing volleyball.  I was diagnosed with tendonitis but soon started having other joint issues.  I was diagnosed with arthritis and then benign hyper mobility joint syndrome.  You can read more about BHJS here.  I'm very flexible & was told that I may need artificial joints when I got older.  I was told to stop doing all sports except for swimming.  And so began my slow decent into weight gain and non activity.

I've been working out, cardio & strength, for a while now.  The park where my son has soccer practice has a .75 mile track.  Everything starts with the decision to try.  And here's what happened...





Talk about a high!!!

The following week I did 2 miles!  I kept up with my 21 Day Fix Extreme workouts and ran twice a week at the park during my son's soccer practice.  Our group was 1.5 miles the first week, 2 the second, 2.5 the third and finally 3 miles.  One gorgeous day after my son went to afternoon kindergarten, I went to the park.  And I did it.



2 days later, during soccer practice I did it again.  I was running in the Delaware Charity Challenge 5k that Saturday.



Saturday May 2 at Lums Pond, I ran with my friends in the Delaware Charity Challenge.  It was an incredible experience!  It was over the river and through the woods.  The only part I didn't run with up a hill.  


2 weeks later, I ran another one.  My best friend asked if I'd do the Preston's March for Energy 5k about 3 days before it was going to happen.  Without a second thought I said yes!  She has a goal of going 1 5k per month and I LOVE that goal.  I've found that running with a big group of people pushes me to keep going.  It's easy to stop when you're by yourself but when everyone else is running you want to keep up!


We ran half an walked half.  The best thing about doing this with your BFF who isn't a die hard, time obsessed runner, is that you CAN just walk & talk without the kids around for a little and then you both SPRINT to the finish line.  We finished at 46 minutes.  My previous time was 43 minutes.  But I don't really care about those times.  I ran 2 5k's in 2 weeks!  ME!  I DID IT!

3 Day Refresh Results

On Monday March 23, I started the 3 Day Refresh.  What is the 3 Day Refresh you ask?  I'll answer that below.  First, here are my results:


My belly bloat is gone! And thanks to my Victoria's Secret Ultimate Sports Bra, my boobs look like torpedoes.  Here's my scale:




Crazy right?  Who in their right mind posts a pic of their scale WITH THEIR WEIGHT ON IT?!?
I do.  Why?  Because it's just a number.  This number does not define who I am.  It is a small measure of my success.  I've seen this number before but this number and the body above did NOT match.  I'm healthier, stronger and happier than ever.

8 Weeks and Counting


I realized today that it is just a little over 8 weeks until Memorial Day.  For the first time EVER IN MY LIFE, I'm looking forward to summer & wearing a bathing suit.  My body has never looked like this nor have I ever been so confident about it.  Usually I dread the thought of giving up my hoodies & sweatpants.  Like seriously dread it.  Now I dread something new.  SHOPPING.

Yes I am probably the only American woman who hates shopping.  I value comfort over style and being short, it's impossible to find stuff that is the right length.  Most capri pants are closer to my ankles than my knees and don't even get me started on "short" jeans.  I don't have the patience to comb through clearance racks, I suck at putting anything other than a pair of shorts & a t-shirt together and after so many years of hating the mirrors, I just don't know where to start.  I have a drawer full of logo type tees and I'm actually ready for some cute stuff.

On another note, I'm currently doing the 3 Day Refresh.  It's a 3 days cleanse/detox that is low calorie but you still eat real food as well as a fiber sweep, Shakeology and another shake called Vanilla Fresh.  In the past 24 hours, I've lost 3lbs.  I know this is water weight, which is exactly what I wanted to get rid of.  I had a less than stellar week with food last week and with my allergies kicking in, it's the perfect way to get back on track & take a break from working out (only mild to moderate exercise is recommended but I'm taking a break).  I didn't take "before" pics so I'll be posting scale results.  Scary?  Eh.  The scale only tells a part of the story and honestly, I used to weigh 50+lbs more.  If it helps someone than it's worth it.

Insanity Max:30 Before & After

On January 5, my husband and I decided to do Insanity Max:30.  He's done the original Insanity but honestly, I had ZERO interest!  I'd seen him do some of the Insanity workouts and, um, no thanks.  But my team was doing a couples challenge so I thought I'd give it a try and do it with him.  Here's what happened:

*We woke up every morning before the kids and worked out together (I am NOT an early riser)

*We found that we actually LIKED working out together

*We pushed and motivated each other to keep going

*Doing this together, made us work harder

*It was almost like a little date in the morning

*I LOVED IT

*I lost 10lbs

I honestly never thought I'd like this workout as much as I did.  It's only 30 minutes, 5 days a week and it's so cool to see how far you went the week before.  The idea is to go as hard as you can until you "max out".  You write down your time, find your life, and then jump right back in & keep going.
There's also a Modifier Track in the opening menu.  This allows you to split the screen so you can see Shaun T and focus on the modifier.  This right here was how I was able to do it.  I modified almost all of it.  I can't do jumping and I wasn't interested in immediately maxing out.  The first workout on the first day, I could've maxed out in the warm up!

I also followed the 21 Day Fix meal plan.  Why didn't I lose more weight?  Because I love food and it's my biggest struggle.  Straight up.

21 Day Fix vs 21 Day Fix Extreme

What is the 21 Day Fix?

The 21 Day Fix is a fitness program created by celebrity trainer & bikini competitor Autumn Calabrese.  It focuses on clean eating, portion control and 30 minute workouts.


See those cute little containers?  Those right there are the key.  They're for your portion control & they are as follows:
Green - Veggies
Red - Proteins
Purple - Fruit
Yellow - Starches
Blue - Healthy Fats
Orange - Seeds/Dressings

You not only get the containers, you also get 30 days of Shakeology, the workouts, a foolproof eating plan and an online support group for accountability.

Healthy Clean Meal for under 400 calories

I started the 21 Day Fix Extreme: Countdown to Competition meal plan this week.  This is perfect for people who are looking to take their nutrition & fitness to the next level.  I'm still finishing out Insanity Max: 30 but I'll be starting this workout program in March.  I'm so excited for it!  Every workout uses weights and I'm missing doing strength work other than push ups.

One thing that will really help you with your meal planning is meal prep.  I threw a bunch of chicken breasts in the crock pot so I'd have some cooked chicken on hand.  I have a bunch of other tips that I'll do in another blog post.  I also have discovered that shredded, sauteed sweet potato is quite possibly one of the greatest foods ever.

So here was my lunch.  I took 1 green of chopped kale, 1 red of diced cooked chicken 1 yellow of shredded sweet potato and 1-2 tsp of coconut oil (I used 1).


  • Take 1/2 tsp of coconut oil & melt it in a pan.  Throw in the chicken and once it's coated in the oil, sprinkle 1/2 tsp of the Fix southwest seasoning.  Once heated through, take the chicken off the heat.
  • Melt 1/4 tsp of coconut oil and once melted, toss in the kale.  Cook for a couple minutes until it's heated through and a little crispy on the edges.  The color should change to a darker green.  Eyeball it.  I like my underdone so there's still some crunch.  When you get it how you like it, take off the heat.
  • Melt 1/4tsp of coconut oil and once melted, sprinkle your sweet potato in.  stir around to get coated and add 1/2 tsp of Fix all purpose seasoning.  Now you want to watch the sweet potatoes.  You don't want them to burn but you don't want them underdone.  Turn down the heat a little and let them cook.  Stir them around after a minute or 2 until they get a golden brown color.
And there you have it!   A healthy meal under 400 calories (375 to be exact).  Remember, you don't have to eat tasteless food just because you're eating healthy!

Are you ready to get fit AND get something FREE??

Hi, my name is Andee and I'm addicted to Beachbody programs.  File that under "Things I Never Thought I'd Say".  Right now I'm smack dab in the middle of Insanity Max: 30 and I am committed to finishing it.  My husband & I are doing it together.  Waking up before the sun to work out together.  I like it more than I thought I would!  We really push & motivate each other (and let each other know when the other has maxed out!).  I HATE getting up so early but I love getting my workout out of the way.  Along with Max: 30, I'm following the 21 Day Fix meal plan.  So far I'm down 8lbs!

So here's where the addict part comes in.  The 21 Day Fix is an amazing program.  Portion control, clean eating, 30 minute workouts & Shakeology.  Basically everything you need to be successful.

Easy Healthy Snack!!

I've been following the 21 Day Fix meal plan for a little over a month.  I've done this before but never stuck to it.  So far, I'm down 8lbs!  I came up with this snack to cover 1 yellow, 1 red & 1 blue.  It's seriously yummy and only about 170 calories.

For this I used Wasa Crispbread, dijon mustard, Applegate Farms Smoked Turkey breast and reduced fat provolone cheese.  I use the Applegate Farms brand because there are no nitrates or nitrites.  You can use ham, no cheese, different condiment, anything you like.

I Hate My Face

To start off, I don't hate my face.  Not anymore anyway.  For as long as I can remember, I've hated pictures of me.  Skinny or not, I didn't like my smile or anything about a picture of me.  I think it's because we all see ourselves a certain way & when a picture doesn't reflect how we see ourselves it can be disappointing.  How often have you looked in a mirror & then later saw a picture and thought "That's not me!"?

After my oldest son was baptized in September 2005, I saw pictures of myself that couldn't POSSIBLY be of me.  This picture specifically.  Who the hell was that?!?


I was 5'3" and 240 lbs.  Technically morbidly obese.  I was a size 22/24 and getting bigger.  I couldn't believe I'd let myself get like this.  This picture started the very LOOOONG, frustrating journey of trying to lose weight.  

And so continued the hatred of my face.  There are not a lot of pictures of me and Jack.  Mainly because I was always behind the camera.  I was so unhappy with myself, I just couldn't bear to be in pictures unless I had to.  Facetime & Skype were like torture because then I HAD to look at myself in that small square on the screen.  I would actually say to myself "I hate my face".  It's an awful way to think of yourself.  I also avoided full length mirrors like the plague.  Not only was I unhappy with my face but I hated my body.

When my mother died in July 2013, we realized that there were no pictures of her & all three of her grandchildren.  Actually, there were barely ANY pictures of her with any of them!  I realized that I was doing the same thing she was.  She always put down pictures of herself because she didn't like them.  I realized I would pull the same face she did when I saw a pic of myself.  I decided then that I wasn't going to do that anymore.  My kids don't care how I look.  My kids don't care if I'm making a weird face.  They care that we are in a picture together.  I have 2 boys and I hope that one day they'll appreciate there are so many pics of us together.

The breakthrough happened last week.  It was Jack's birthday & my in laws wanted to Facetime with him to wish him happy birthday.  I KNEW I'd have to be on there with him.  I WAS NOT looking forward to it.  I try always to look at the camera so I don't have to look at myself.  This time was different.  As I chatted with them I glanced at myself.  There I was.  The me I always had in my head.  I loved how I looked in that little square.  My hair, my face, my smile, all of it!

Finding my fitness has been the greatest thing that has ever happened to me.  Not only do I feel better because I'm moving my body but hot damn, do I look good!  My confidence has never been so high!

Why did I write this particular blog post?  Why did I decide to let you into a part of myself that I never let out into the public?  I know I'm not the only one.  I'm not the only one who has avoided mirrors & cameras.  Who compares herself to everyone else and only looks at the shortcomings, or used to anyway.  I'm beginning to love mirrors and cameras.  I love taking selfies.  I love myself and the person I'm becoming.

1 year ago, I bit the bullet and bought a Beachbody challenge pack.  I'd hemmed and hawed about it for months.  My friend was a coach and kept talking about Shakeology but I was afraid.  Afraid of change, afraid of cost, afraid of failing, afraid of everything.  It had been a hard year but I was also ready to make a change.  A change in my body and mind.  I had joined one of her free Paleo groups on Facebook but I knew, KNEW I needed something else.

So what did I do?  I signed up to be a Beachbody coach to get a discount on the Shakeology.  It was free with the purchase of a challenge pack so why not?  Who doesn't love a discount?  Then I started working out.  I still hadn't figured out the food thing though.  How do you change 30 years of bad habits?  I bought the 21 Day Fix.  Color coded portion control containers, a meal plan and workouts.  Again, this took some times.  In fact, it took me almost a YEAR to get the food thing right.  I love food!  I can destroy some chips & dip in no time flat.  And don't even get me started on my love of pizza.

I've done a variety of programs but it was the food that needed help.  After a year, I finally feel like I have it under control.  I still have times when I over do it but I've become more committed to eating healthy and not doing the "I worked out so I can eat a whole pizza and drink wine" thing (we've all been there).

How has the past year been overall?  A-freaking-mazing!  Ups and downs, wanting to quit, trying something new.  My confidence is through the roof.  The best part?  Being able to help other people.  Motivating them to get healthier & start moving.  I LOVE to help people.  Like, seriously love it.  I've always been up and down with my weight so coaching other people who have my same struggles is so rewarding.

Overall, I've lost about 10lbs and 18 in.  Like I said, it's taken me the good part of a year to get the food aspect right.  It's hard!  Food is sooo good. But after a year of fighting with it, I've finally learned a good balance.  I'm so proud of myself.  The girl on the left is long gone and the girl on the right is just going to get stronger & faster!  The most important part....I DID NOT GIVE UP.  I couldn't have done it without the support of my coach who always helped me stay motivated & accountable.

21 Day Fix Easy Lunch

I restarted the 21 Day Fix meal plan to go along with Insanity Max 30.  It really is an awesome way to get control of your portions and though I've started it numerous times, I never finished it.  Now that I'm doing a more intense workout program, I want my nutrition to be on point so I can see the results I want.
A few things first.  Meal prep and planning is KEY to your success on any plan.  It's taken me a while to get the hang of that but I think I'm finally there.
A couple things you can do at the beginning of your week:

*Bake/broil/grill 4oz chicken breasts.  Once they cool, put them in a container in the fridge.  Then you have cooked chicken whenever you need it.
*If you need chopped veggies for your weekly recipes, try to do it the day before.  One less thing you need to do to get dinner ready the next day.
*Peel & chop veggies for snacks & salads
*Hard boil a dozen eggs for snacks & salads (don't forget to label them hard boiled!
*Make your lunch the night before.  If it's a salad, take the dressing in a separate container so the salad doesn't get soggy & wilted.

There are MANY other different things you can do but this was all off the top of my head.

That said, I wanted to share my lunch today.  I love food and I love it when I throw some stuff together & it turns out amazing.  It's cold, snowy & miserable here.  I used the last of my salad stuff yesterday and we get our CSA tomorrow so I don't want to go to the store.  In my fridge, I saw carrots, cabbage & the cooked chicken.  Stir fry!  I should've take pics throughout but I didn't.  Oh well.  And I didn't pay attention to how long it took.  But it's easy & it's good :)

Here's what I did:
Chopped & filled 1 green with cabbage
Sliced & filled 1 green with carrots
Filled 1 red with sliced chicken (see prep note above)
1 orange of the 21 Day Fix Asian Citrus Vinegarette
1 tsp sesame oil
Chopped garlic & a few dashes of ground ginger (or you can use fresh if you have it)

Heat 1 tsp of sesame oil in a large frying pan.  Saute' the garlic for a minute or so on a medium heat (be careful not to burn it!) and add the cabbage & the carrots.  Stir until softened and add the sliced chicken.  Heat the chicken through, add a few dashed of ground garlic and add the vinaigrette.  BOOM!  Warm, flavorful, healthy lunch.  You could do it for dinner too or change up the veggies!

 The greatest thing about cooking is that you can tailor it to whatever you want.

Lots of A-HAs

I had a big A-HA moment this week.  I've been trying to diligently track all my food & activity on My Fitness Pal and I've been somewhat successful.  If I don't do it immediately before or after a meal, it doesn't get done.  And then I have guilt.  Ugh, I'm so hard on myself!  I noticed one of my friends had her food diary as public.  I thought that was a bit daring.  I always had mine private because I didn't want people to see when I slipped up.  Of course whenever I started a new diet, I told my friends.  I couldn't dare to be seen as failing, even though everyone has a bad day.  And sometimes you just NEED pizza and wine.  Anyways, I realized that the best way for me to help others in my coaching was to show them what I was eating.  I've found that I need to eat a lot more calories than I thought and what better way to show others that you can eat a lot & still be healthy.  So I made the decision on Monday to make mine public (EEK!).  Now ALL of my friends can see EVERYTHING I log here.  If you're on MFP, my username is andee711.  I even promise to log the pizza and wine :)

I've always been a been a yo yo dieter (like the majority of us).  I go hard core for about a week or two, then I have a slip up, then I say "ah screw it".  And a few months later, I feel gross about myself and the cycle starts all over again.  I actually thought about it & I've been doing this for about 20 years.  Wow...20 years.  Since I was a teenager.  In all that time, I never found something that clicked for me.  I finally feel like this is it.  Since January, I've been eating right (90% of the time) and exercising pretty regularly.  Sure I have weeks where I just don't have it in me or I'm super sore and those days I give myself a break.  I allow myself to take a break instead of beating myself up about missing a workout or eating junk, which is often the beginning of the end for me.

I'm seeing changes in myself that I never thought I'd see.  First there are the physical ones...less wobble in my arms, the backs of my thighs are noticeably smaller, and I HAVE to put my jeans in the dryer.  Now the mental changes.  I feel better about myself.  I feel better in who I am and in the knowledge that I am setting an example for my family (gotta love it when your 4yr old joins you in your workout).  My anxiety is better because I get all of this nervous energy out.  I know I am doing something good for ME and as a mom, it's sometimes hard to enjoy something that is just for you and not for your whole family.  But wait a sec, I AM doing this for my family!  (that was a serious a-ha moment after I wrote that last sentence)  My healthy lifestyle is benefiting them as much as it is me!  We went for a big walk Easter Sunday instead of just lazing around the house.  My husband is going for a run most nights.  My boys, who are already active, are more in tune with healthy eating.  Though as I type this my 4yr old is gnawing on a big chocolate bunny but, whatevs, it's spring break, he's been playing outside most of the day and is covered in dirt.

New Program!

I haven't posted for a while for a few reasons but mainly, I just didn't have a moment where I thought "I need to do a blog post about this".  I've been having a tough time grieving lately and it's hard to be motivational to others when you're having a crappy day.  The exercise does help though.  Helps lift my mood, focus on something that's good for me and sweat out the negativity in my life.

I finished ChaLEAN Extreme and, while I didn't lose a lot of weight, I lost a bunch of inches!  Here are some before/after pics:

Where did my hips go??  I'll be honest, I didn't think I had that much of a change while I was doing it so I'm so glad I took before/after shots.  I HATE pictures of myself.  Even the ones that look good.  Don't like my body, smile, hair, clothes, none of it.  But I'm slowly working to change that mindset.  It takes time to change a lifetime of habits but I'm on my way.

I then started what has become BeachBody's huge seller, the 21 Day Fix.  It sold more in a week than they had projected entirely, to the point where it got back ordered pretty quickly.  Here's what you get with the Fix:
2 workout DVDs with 10 workouts, Shakeology shaker cup, meal plan & containers for portion control.  OMG I was in love.  Portion control is, I think, where the majority of us struggle and these containers really and truly help.  There is a calorie calculator and a chart that shows you exactly how many of each container you can eat & what to put in it.  It was slightly intimidating at first because A-I was excited and B-I like to complicate things for myself.  
I started off strong and then life got in the way for about a week so I've restarted the Fix to get myself back on track.  Week 1 went great and then I started doing a squat challenge which REALLY gave me a lot of pain in my hip joint so I needed to take like 4-5 days off.  Couple that with working last week and I just went off the rails.  It happens.  Nobody's perfect.  Least of all me.

I'm day 2 into my restarted week 1 and let me tell you, the chick that devised this system is the devil herself.  Autumn Calabrese is a fitness trainer & bikini competition winner and has a SMOKING body.  The workouts are tough but they're only 30 minutes.  You can do anything for 30 minutes, right?  One of the things I love about the BeachBody workouts is there's a timer on the bottom of the screen so you know exactly how much longer you have to endure whatever it is you're doing.

Slow and Steady Wins the Race

When I got married, I moved to England 5 days after my wedding.  My husband is from England and I had decided to live there.  It was tough moving to a brand new place but exciting and after a year or so we though, hey let's add a kid to the mix.  Jack was born in January 2005 and 3 months later we moved back to the US.  I was suddenly around all the junk food I hadn't seen for a while and after 5 months, I looked like this:


Yup, that's me in the middle (and my dad on the left thinking, damn she got fat!).  All 240 lbs of me on a 5'3" frame (that's 17 stone for you metric peeps).  I made the pic as big as I could so you could see just how big I was.  It was after seeing these pictures of my son's baptism I needed to do something.  I was already starting to have trouble walking because of the weight on my ankles and generally had zero energy.  And so began my never ending weight loss journey.  Thankfully, I don't look like that anymore.  Here are my before pictures from 2 months ago.

I still have a long way to go but I am so much stronger and healthier than I was 9 years ago.  I am currently about 60 days into ChaLEAN Extreme with 30 days to go.  I'll take true "after" pictures in a month when I'm done.

How have I been doing?  Well, I still haven't lost much weight.  And my measurements haven't really changed.  BUT!  I have significantly less jiggle in my arms and thighs and overall, I feel stronger.  I guess my fatness is being replaced with muscle!  Hellooooo summer tank tops!  Let's be honest, being healthy is awesome but looking good in your clothes is pretty up there too.

My biggest challenge is consistently eating right.  I LOVE FOOD.  I'd say about 80% of the time, I do really well with my meal planning/eating.  The other day I was feeling really down and the only comfort food that looked appealing was low fat cottage cheese.  Seriously?  Who eats low fat cottage cheese when they're in tears?  Well this girl did!  It's all about small victories and changes.  I've never been a skinny person and I never will be and for the first time in my life, I'm 100% OK with that.  Like I tell my son, it would be a pretty boring place if we all looked the same.

Around the time Chalene Johnson takes a break in my routine, I should be getting the 21 Day Fix program.  It's a program that comes with containers for portion control, a meal plan, and workouts.  I CAN'T WAIT!!!  It completely exceeded sales expectations within 8 hours of its release and I've seen AH-MAZING results from people who have done it.  It's been back ordered and I really hope it's here by the end of the month.  I honestly never thought that I would see fitness programs and thing "OMG I HAVE to try that".  It's more addicting than I ever dreamed it would be.  Working out addicting?  Yeah, I'm kinda getting there.  Head on over to my page to grab a challenge pack for the 21 Day Fix, T25, P90X (1,2,&3), some Shakeology or whatever you feel like trying.

Tuesday Sucked, but Wednesday Was Better

My mother died in July 2013.  It still pains me to type that or read it.  We had our close and not so close times in our relationship.  At the time of her death, it was one of our not so close times.  Regardless, she was always there when I needed to talk.  And yesterday, I really needed to talk to her.  I think for the first time in my life I had my first real "I just want my mom" moment.  There were lots of tears and it was an emotionally draining day.  In terms of my workouts, it was a rest day and I took FULL advantage.  We're getting a snow storm and our cupboards were bare so I did a big shop.  I then fed my family cereal and oatmeal for dinner and ordered myself a small sub and cheddar bacon fries.  Because it was a shitty day and damn it, salad just wasn't going to cut it!  Normally, I'm a "cook everything from scratch" kinda gal but sometimes you just have to say screw it.

I just started the Push Circuit of ChaLEAN Extreme.  Today was Push Circuit 2.  I usually do my workout in the morning or, if I have to work, in the early afternoon.  Today I was tired from work, freezing cold, and worn out emotionally.  3pm came and I thought, well it's now or never.  So I put on my smelly workout clothes and, among other exercises, did one legged dead lifts (helloooo hamstrings!).  I IMMEDIATELY felt better physically and mentally.  I mean, let's be honest, of course I thought "thank goodness that's over with" but I also thought "that's it?".  The workouts in CLX are 30-45 min long.  Actually only Burn Intervals is 45 min long.  If my 9 yr old wasn't about to get off the bus, I totally would've done Ab Burner or the bonus Turbo Jam workout.  My point is that within 30 minutes, I wasn't cold, my energy went through the roof, I felt happier and I WANTED to do more!  

My life has been filled with self doubt and food regret.  I love food.  I love to eat it, cook it, read about it, watch cooking shows and my favorite, serve it to those I love.  As much as I love everything about food, I do what everyone else does...1 bad food decision and I'm off the rails.   Forget the diet.  Forget eating healthy.  What's the point?  Yesterday I made the decision to permanently change my thinking.  One bad meal does not a diet break.  I hate the term "diet" and "lifestyle change", even though that what I'm doing but I have no better words.  

So yeah, yesterday sucked.  Big time.  But today was better because I exercised and for 30 minutes, focused on nothing more than making my muscles stronger.  And I had a free chocolate covered strawberry...that was a bonus :)

New Beginnings

A few days after Christmas, I posted this
Why? Because it's hilarious. Don't we all see that on Facebook like, the day after Christmas? 2013 was a tough year and this was the perfect time to make a fresh start with myself - mind, body & soul. A friend of mine had been posting stuff about Focus T25. It's by Shaun T, the lunatic that does Insanity. I'm all for working out but Insanity scared the hell out of me and I have arthritis in my knees. Plus if I do jumping in a work out, I'm going to have to invest in Depends (thanks kids).
Anywho, she is a coach with Team Beachbody and set out to find a program that would help me lose weight and wouldn't be too stressful on the knees. She came back with ChaLEAN Extreme by Chalene Johnson. A little blonde lady who has as much energy as a sugar rushed squirrel. Extreme circuit training *insert scared look*.
I work part time and when I go to the gym, I get bored and don't work as hard as I should. She was also telling me about Shakeology "The Healthiest Meal of the Day".  A shake in which you can add water or other stuff to.  Well why not.  I mean, I've tried almost every diet out there.

Slim Fast
Atkins
South Beach
Dukan
Optifast
Special K (2 bowls of cereal & 1 meal a day)
as well as your general count calories/work out.

A few things worked, but as with most diets after a few weeks I got bored or didn't see results so I fell back into the same 'ole patterns. She gave me some samples of shake-o and I was surprised at how full it made me. When I work, it's from 9:30-12:30 so I have breakfast around 8:30 and then usually don't eat again until after 1. I never felt hungry! So I thought, eh why not. I'll buy the Challenge Pack and give it a whirl. I signed up the be a Team Beachbody Coach so I could get a discount (who doesn't love a deal?)

along with my big bag of chocolate Shakeology.
Good Lord, what have I gotten myself into?!?!!? 7 DVDs, a guide book (a guide book???  It came with a guide book!) a resistance band, some giant rubber band called a thigh toner and a ripped chick on the cover.
Today it's February 9th. I've finished phase 1 which is called the Burn phase. Mostly weight training and a little cardio.
Sad part - I haven't lost any weight. Not an ounce.
Thrilling part? I've lost 3 inches off my hips & 1 1/2 off my waist. My dear tape measure is becoming my new best friend and the scale remains my enemy. I have a ton of energy, I feel stronger (had to buy heavier weights!), and drinking the Shakeology really helps me not go for junk food.
